Macadamia Malva Pudding

This macadamia malva pudding is a delightful twist on the traditional recipe, combining rich flavors with a nutty crunch that’s sure to impress!

Ingredients:

For the Pudding:

  • 1 cup (150g) all-purpose flour or gluten-free flour 
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup sugar
  • 2 large eggs
  • 1/3 tablespoon apricot jam
  • 1/2 cup milk
  • 1/2 cup macadamia oil
  • 1 teaspoon vanilla extract
  • 1/2 cup (75g) chopped macadamia nuts

For the Sauce:

  • 1/2 cup (120ml) milk
  • 1/3 cup (100g) sugar
  • 1/3 cup (120ml) butter
  • 1/3 cup (120ml) fresh or canned apricot juice 
  • 1 teaspoon vanilla extract

Instructions:

  1. Preheat the Oven: Preheat your oven to (175°C). Grease a medium baking dish. 

  2. Mix Dry Ingredients: In a bowl, whisk together the flour, baking soda, and salt.

  3. Combine Wet Ingredients: In a separate bowl, beat the sugar and egg until pale and fluffy. Mix in the apricot jam, milk, macadamia oil, and vanilla extract.

  4. Combine Mixtures: Gradually add the dry ingredients to the wet mixture, stirring until just combined. Fold in the chopped macadamia nuts.

  5. Bake: Pour the batter into the prepared baking dish. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

  6. Prepare the Sauce: While the pudding is baking, combine the milk, sugar, and butter in a saucepan over medium heat. Stir until the butter is melted and the sugar is dissolved. Remove from heat and stir in the apricot juice and vanilla extract.

  7. Soak the Pudding: Once the pudding is done baking, remove it from the oven and immediately pour half of the warm sauce over the top, allowing it to soak in.

  8. Serve: Let the pudding sit for a few minutes, then serve warm with the remaining sauce drizzled over each portion. Optional: serve with custard
