Macadamia Coriander Pesto

This coriander pesto was absolutely scrumptious! We decided to switch things up by using our flavorful macadamia oil and swapping out the typical cashews for macadamia nuts. Trust us, it's a game-changer when spread on a cracker with cream cheese - so delicious! YUM! Can't wait to kick it up a notch next time by adding some chili!

Ingredients:

1 bunch of fresh coriander 

1 tablespoon of macadamia nuts 

1/4 cup macadamia oil 

1 clove of garlic

1 fresh lime

Salt and Pepper

Chilli (Optional)

 

Grind the macadamia nuts and garlic together then add the rest of the ingredients and grind in a food processor until you get a delicious pesto consistency.
